Our winters here where I live, no longer go below -8°C and snow is increasingly rare.
This year I tried to keep root vegetables (carrots, turnips, leeks...) in the ground. It works very well, the only drawback is that it is difficult to get them out of the ground when it is frozen.😅
Free up some space for future plantings.
Check your seed stock before harvesting (keep a few plants to let them go to seed if necessary).
Harvest, clean, cut, freeze, or sterilize any excess winter vegetables.

A vegetable garden is great, but you need to know how to cook all these vegetables and/or preserve them.
